The October issue is directed at improving the experience of selecting oysters to take home and shuck. We have used a visit to Harbor Fish, an excellent seafood market in Portland, ME, as an example. A second source of inspiration herein is the conventional shucking contest. The premise is that we can all learn from circumstances involving oysters where special refined expertise is required.
