Course Descriptions

Please note that the courses listed here are the core Wilton classes at the time I stopped teaching in retail outlets.  Private classes will not necessarily cover all of these skills/techniques and are project-based.  For example, I can either instruct a group on core/basic cake/cupcake techniques in order for students to acquire general/broad knowledge, or I can do a more in-depth class, such as doing a cookie decorating project from start to finish.  Contact me at mariahanrahan@att.net for more info.

Course 1-Building Buttercream Skills

In this course, students will learn the basics of cake decorating, including how to bake a great cake, see how to make and color icing, and learn the best way to ice the cake.

Techniques include stars, drop flowers, rosettes, dimensional decorating, shells, leaves, filling and icing a cupcake, guidelines for elementary cake design, printing/writing, ribbon roses, and the piping gel pattern transfer.

Course 3-Gumpaste and Fondant

In this course, students will learn to create hand-shaped flowers, beautiful borders, and bold accents using easy-to-shape gum paste and fondant.

Topics include gum paste and fondant 101, tinting gum paste and fondant, basic principles of floral cake design, covering a cake or cake board with fondant, elements of fondant cake design, and creating geometric designs using cut-outs, overlays and inlays.

Techniques:  bow, mum, rose and rosebud, carnation, calla lily, daisy, cut-outs, overlays and inlays, and eyelet, ruffle and ball borders.

Prerequisite: Course 1 or similar cake decorating experience.  Contact instructor if you are unsure if you qualify for this course.



Course 2- Flowers and Cake Design

In this course, students will learn/discuss basic principals of cake design,  making royal icing, and guidelines for flower arrangements.

Techniques: Royal icing flowers: rosebud, blossom, violet, lily, Wilton Rose; Buttercream techniques: reverse shell, basketweave, rope

Prerequisite: Course 1 or similar decorating experience.  Contact instructor before registering if you are unsure if you qualify for this course.
