Stuff I Can't Live Without
Okay. On this page I'm going to post some of my favorite recipies as well as the food items that I just can't live without. Enjoy!
Grocery Store Staples Sara Lee Whole Wheat Bread - 2 slices are only 1 point. ULTRA Lean Pockets - 4 points each and they come in Meatballs and Mozzerella, Supreme Pizza, and Ham. Western Alternative Bagel - 1 point for a normal sized bagel. These come in cinnamon spice, whole wheat, country white, and onion. Sunbeam Light Wheat Hot Dog and Hamburger Buns - 1 point per bun. Bag Spinach - Whatever's cheaper. More nutrients than iceberg and tastes good. Egg Beaters - Come in lots of flavors. My favorite is Southwestern. Smart Start Cereal with Antioxidents - 4 points a cup with 1/2 cup skim milk. Skim Milk - Whatever brand is the cheapest or expires the latest. Hillshire Farms Deli Meats - I like ham, but I think most of them are 1 point for 6 slices. Smart Ones Giant Cookie Bars - SOO yum and only 2 points. Edy's Whole Fruit Bars - VERY good and only 2 points each. Fuze - The Slenderize Raspberry/Cranberry is GOOD and 0 points, but it's pricy. Diet Sunkist - YUM! I was irritated to realize that this is caffienated though. 0 Points. Liter Bottles of Water - Whatever's cheapest. (Except Evian..I don't like how that tastes.) This makes it easier for me to get my waters in. 100 Calorie Packs - These are cookie and cracker crisps that are separated into packs of only 100 calories each. We like the Chips Ahoy. Only 2 points each. Yoplait Light Yogurt - 2 points each. Blackberry is my favorite, but they're all good. Splenda - Use instead of sugar. 0 Points and tastes the same. Healthy Choice Brownie Bliss Ice Cream - YUM! 12 points for the pint. This is a good splurge every now and then. I certainly don't do it all the time! Betty Crocker Carb Monitor Mixes - I've tried the Wild Blueberry Muffin and the Chocolate Chunk Brownie and they are SO good. Bake them with applesauce instead of oil and EggBeaters instead of eggs and they're only 1 point each!
Favorite Restaurants (Fast Food and Sit Down) Applebee's - They even have a Weight Watchers menu! Subway - YUM! 6" Sub Club on white or wheat w/o cheese or mayo is only 5 points!! La Paz - Our favorite mexican restaurant. And it's UPromise! Wendy's - I've always loved their breaded chicken sandwiches even better than Chic Fil A. Their combo meals now allow you to choose between several items like: french fries, side salad, caesar salad, baked potato, and chili. Smokey Bones - SUCH yummy BBQ. But definitely not OP! Nava - Upscale Southwestern fare. Part of the Buckhead Life Restaurant Group. Veni Vidi Vici is also part of that group and they are very good too.
In a blender, or by hand, combine the first 6 ingredients. Pour mixture over chicken and stir. Separate crescent roll dough into four rectangles and seal perforations. Spoon 1/2 cup of the mixture into center of each. Pull opposite corners of dough to center and seal. Sprinkle each "baseball" with breadcrumbs and place on ungreased cookie sheet. Bake at 350 for 20 minutes.

Note: You can add anything you want to this. Some add broccoli or mushrooms. Some use chives instead of onions. Some use 9oz frozen shrimp instead of the chicken and add chopped red pepper and 1/2 Tbsp of Old Bay and Hot Sauce.
I just tried this for the first time 2 weeks ago and we've had it three times already! It's a big hit!
Margaritas
1 can Diet Sprite
1 tsp Crystal Light Lemonade Powder
1/8 Cup Lime Juice
1 shot Tequila
3 Cups Crushed Ice
Combine ingredients in a blender and blend until smooth.
Makes 2 servings @ 1pt each.
Taco Soup
3 cans diced tomatoes
1 can whole kernal corn
1 can black beans
1 can pinto beans
1 can great northern beans
1 small can chopped green chilis
1 pkg taco seasoning
1 pkg ranch dressing mix
1 soup can of water
1 lb browned lean ground beef (optional)
Add all ingredients into a large pot and mix. Simmer on low for 1 hour and enjoy!
2 pts per cup w/o beef, 3 pts per cup w/ the beef.
This is great to freeze and reheat later.
Chocolate Fiber One Muffins
24 servings 1 point each
1/2 cup unsweetened cocoa 3/4 cup all-purpose flour 1/4 tsp baking soda 1 Tbls baking powder 1/4 tsp salt 1-1/4 cup sugar 1 tsp vanilla 2 cups water 3 cups Fiber One Cereal 2 egg whites (I use 1/4 c egg substitute) 2/3 cup semi-sweet chocolate chips
Preheat oven to 350. Put cereal in water and set aside (make sure all of the cereal gets wet). Mix all dry ingredients together. Combine cereal, dry mixture, egg, and vanilla in mixer. Fold in chocolate chips. Spray the liners with Pam spray. Bake for 18-20 minutes.
After the muffins cool down, I put them in the refrigerator. I like to eat them cold from the frig. I usually freeze half of them, too.

Mediterranean Vegetable-Cheese Pie
Olive Oil Cooking Spray
2 medium-sized potatoes, peeled and sliced in 1/8 inch rounds
½ cup diced onion
8oz (about 8 cups) baby spinach
3 kalamata olives, pitted and chopped
2 whole eggs
3 egg whites
1 cup nonfat ricotta or fat free cottage cheese
1 tbsp feta, crumbled
3 tbsp finely chopped fresh basil or dill, or 4tsp dried basil or dill, divided into 2 equal portions.
3 Roma tomatoes, sliced into ¼ inch rounds
1 ½ tbsp grated Asiago or Parmesan
1 ½ tbsp grated low fat mozzarella
Heat oven to 350.Coat a 9” pie plate with cooking spray.Line bottom of plate with potato slices.Cut remaining slices in half and arrange around side of plate.Bake 12-15 minutes.Remove from oven and set aside.Coat a sauté pan with cooking spray and sauté onion over low heat until tender, about 5 minutes.Add spinach to pan and let wilt, about 2-3 minutes.Remove from heat.Drain excess fluid from onion and spinach mixture.Stir in olives.In a medium-sized bowl, beat eggs and egg whites.Stir in ricotta and feta.Add half the basic or dill and set aside.Spoon onion and spinach mixture into pie plate over potatoes.Layer on egg mixture, then slices of tomato.Bake 20-25 minutes or until egg is set and a knife inserted into pie comes out clean.Sprinkle grated cheeses evenly over top of pie and top with remaining basil or dill.Return to over for 5 minutes or until cheese melts.Remove from oven and let sit for 5 minutes.Cut pie into 4 wedges.Serve immediately.
