Acacia Honey by Il Forteto
iGourmet is proud
to exclusively offer the super premium honeys from Il
Forteto, whose bees collect pollen from the idyllic
fields around Mugello in Northern Italy. This area is
rich in tradition and has always been the foremost wood
and game preserve of the Italian countryside.
Acacia Honey, the most fluid and pourable of the four Il
Forteto honeys, is made from nectar collected from Acacia
tree blossoms. The Acacia tree is a member of the legume
family, as are beans, peas, clover and alfalfa. Its
blossoms produce a honey that is remarkably clear and
pure. This honey is great drizzled lightly over a bit of
pecorino or gorgonzola, as its sweetness perfectly
balances the salty tang of the cheese.

Berkshire Blue
This cheese was born in 1999, borrowing a recipe from the
blue made by the Willett Farm Dairy of Somerset, England.
The main differences are that this cheese is made in
Massachusetts, under license from Willet Farm, and that
the domestic version is aged an extra 15 days at 35ºF to
comply with U.S. regulations regarding products made with
raw milk. Like Willet Farm's blue, Berkshire Blue is made
from whole unpasteurized Jersey cows milk. Whereas
its English counterpart is sold in Londons leading
specialty food stores, for example, Fortnum & Mason
and Partridges, the US version is still very hard
to find. This artisan cheese is made in small batches,
starting with only 60 gallons of milk. Its production is
done completely by hand, and by only one person. It is
hand-stirred, hand-ladled and manually turned, resulting
in an exceptionally creamy, smooth blue.

Cabot Vintage Choice Cheddar
As it was early last century, Cabot is still a sleepy
little farm town tucked into the rocky soil of Northern
Vermont's rolling hills. Located there is the Cabot
Creamery, a dairy cooperative dedicated to creating
world-class cheddars while supporting the hard-pressed
independent farmers who supply their milk. Established as
a cooperative in 1919, the dairy farmers actually own the
company! Cabot's best cheddar is called "Vintage
Choice." Each block of Vintage Choice is
hand-selected by Cabot's president. Aged undisturbed for
18 to 24 months, limited edition Vintage Choice is
complex, opulent and full of nuances. After this long
aging period, it takes on a full-bodied, rich,
extra-sharp flavor. Cabot's finest cheddar has a texture
that is more compact and a bit drier than authentic
English Cheddar - different, not better or worse. Cabot
Vintage Choice, set apart from other Cabot cheddars by
its deep purple wax, is a wonderful product we
wholeheartedly recommend. Please compare it to one of our
fine English Cheddars and decide your own preference.

Azeitao
Yet another Portuguese cheese recently qualifying for
Protected Designation of Origin (DOP), Azeitao is a great
example of the high quality cheeses emerging from
Portugal. Named after its village of origin, this
flavorful cheese is strongly influenced by its geographic
location at the foothills of the Serra da Arribida. Here,
the sheep milk is rich and fragrant, and one mouthful of
Azeitao reveals its delicate balance of flavors a
result of the superb grazing terrain. Aged for a minimum
of 30 days, this semi-soft cheese has a creamy, slightly
salty interior balanced by a slightly sharp and edible
rind. Azeitao tender rind is formed by the use of a
whitecloth wrap, giving the cheese a distinctively rustic
appearance. Best served at room temperature with some
fresh peasant bread and a generous glass of wine, Azeitao
is sure to be a crowd pleaser!

Baby Gouda makes a great addition to a "Create Your
