Beverages

"Summer Breeze" Smoothie

  • 1 C Fat Free, plain yogurt
  • 6 Medium Strawberries
  • 1 C Crushed Pineapple
  • 1 Medium Banana
  • 1 tsp Vanilla
  • Ice Cubes

Blend and puree in blender until smooth.  Serve in frosted glasses.  1C=24g Carbs

Main Dishes

Low Carb Meatloaf

  • ¼ C roasted red pepper (chopped)
  • 2 lbs ground beef
  • ¼ C onion (chopped)
  • 2 cloves garlic (chopped)
  • 2 Tbsp parsley, oregano, basil mix
  • 2 eggs
  • Shredded parmesan cheese
  • Salt and pepper to taste

Mix ingredients well and place in loaf pan.  Cover with Sugar-free Ketchup and bake in 350 degree oven for 75 minutes or until thermometer in core of loaf reads between 165 and 175 degrees.  1 Serving=6g Carbs (with Sugar-free Ketchup)

Side Dishes

Low Carb (mock) Garlic Mashed Potatoes

  • 1 head cawliflower, boiled
  • Shredded parmesan cheese
  • Minced Garlic
  • ½ chicken boulion cube
  • Cream cheese
  • Butter
  • Chives

Dry cawliflower, cut and place in food processor covering with shredded parmesan cheese.  Let cheese melt over cawliflower, then add garlic, boulion cube, and 1 to 2 oz of cream cheese (up to ¼ of a regular 8oz package).  Pulse until "mashed" then top with butter and chives!! 1 serving=4g Carbs

Soups and Sauces

Sugar-free Ketchup

  • 1 can tomato sauce
  • 1 can tomato paste
  • Splenda-to taste
  • Vinegar

Mix sauce and paste.  Add splenda and vinegar gradually to reach desired sweetness and taste.  The more sugar you add the more vinegar you need.
