Some of my favorite recipes for GOOD health, and GOOD eating!

Through the last year and a half on WW, I've come across some recipes I really enjoy.  I am going to post a few and will update this each time I run into another one that I enjoy.  I stay away from a lot of sweets and junk because I've found that I just do better if I eat healthier so you won't find a lot of desserts on here.   It seems to stay with me longer and give me more energy when I eat lower fat, high fiber and make sure my carbs are lower-glycemic ones packed with good vitamins and minerals.  I also stay away from a lot of white flour products and white rice and really enjoy whole grains, brown rice (especially basmati rice).  I love beans and use them as my protein source a lot because they are fat free and very high fiber.  My diabetes was 10.8 a year and a half ago and now I am on ZERO meds for diabetes and the last A1C I had was 5.1... which is not even considered diabetic.  I mention this because so many diabetics have asked if WW could work for them.  My opinion is, WW is a good, healthy food plan and it has been a blessing in my life.  But I am also of the opinion that there isn't a "right" food plan that fits the lifestyle of everyone in the universe.  Ask God to help you find what works for you. 

Try some of these recipes!

WW Taco Soup

(with burger - 3 points per cup)

(with soy crumbles – 2 points per cup)

 

1 lb. VERY lean beef OR 1 bag Morningstar Farms soy crumbles

1 medium sweet onion

1 can black beans

1 can Bush’s chili beans

1  16-oz. oz can corn, drained

1 can chopped tomatoes

1 can Rotel tomatoes

Ranch buttermilk dressing mix – 1 packet

Taco Seasoning – 1 packet

2 cups water

2 beef boullion cubes (optional… I add because I use soy crumbles)

 

Brown beef and diced onions, drained.  Add other ingredients and cook slowly for 45 minutes.

 

Turkey Muffins
1 lb...99% fat free ground turkey (13 points)
1 box stove top (12 points)
1 cup water
1 egg white (.5 point)

1 tsp. garlic powder

4 Tbsp. diced onion

4 Tbsp. diced bell pepper

Mix all ingredients together. Spray muffin tin w/ Pam and make 12 meatloaf muffins. Bake 350 degrees for 35 minutes.

Total points = 25.5
12 servings
2.1 points per muffin

 

Cheesy Potato Soup

1.5 cups = 2 points
(this makes like 20 servings!)

8 cups water
4 chicken bouillon cubes
2 lbs red potatoes, cubed
1.5 cups diced onion
1.5 cups carrots
1.5 cups celery
1/2 small cabbage
1 lb Velveeta lite - cubed
*optional-1 jalapeno pepper seeded and diced

In a large pot, simmer all except cheese for 30 minutes - or until potatoes are tender. Add Velveeta and let melt...heat until warm and all blended

 

Confetti Chowder

1 cup diced carrots
1 cup diced zucchini
1 cup broccoli florets
½ cup chopped onion
½ cup chopped celery
¼ cup all-purpose flour
½ tsp. pepper
¼ tsp. sugar
3 cups fat-free milk
1 cup reduced-sodium chicken broth
1 cup frozen whole kernel corn, thawed
1 cup diced fully cooked lean ham
½ cup frozen peas, thawed
1 jar (2 oz.) sliced pimentos, drained
1 cup (4 oz.) shredded reduced-fat cheddar cheese

In a Dutch oven coated with nonstick cooking spray, sauté carrots, zucchini, broccoli, onion and celery for about 5 minutes or until crisp-tender. Sprinkle four, pepper and sugar over vegetables; mix well. Stir in milk and broth; cook and stir until thickened and bubbly. Add corn, ham, peas and pimentos; cook and stir until heated through. Remove from heat and stir in cheese until melted.  Yields 8 servings, 4 points per 1 cup serving.

Cheesy Vegetable Soup

1 cup = 1 point

2 bags California Vegetables (broccoli, cauliflower, carrots)
3 cans chicken broth
1 can Rotel
10 oz Velveeta Light

Combine all ingredients, stirring until veggies are cooked to your preference.  I take it off the burner and add the cheese and leave covered 5 minutes and stir.  It’s READY to eat!!  Note: I thaw the bags of veggies in my fridge overnight, then run my Pampered Chef chopped over them to dice them up really small before adding them to the pot.

Pumpkin Pie

1 15-oz can pumpkin

1 can fat free evaporated milk

¾ cup egg substitute

½  tsp salt

3 tsp pumpkin pie spice

1 tsp vanilla

1 cup splenda

 

Bake 400 for 15 minutes and then 350 for 45 minutes

Eight servings – 1 point per serving

 

Oven Fried Sesame Chicken

4 chicken breasts (3 oz each)

2 T soy sauce

1 minced garlic clove

 

Place soy sauce and garlic in a bowl and add chicken, turning once.  Remove chicken from soy sauce..

 

In a large zip lock bag add:

3 T. sesame seeds

3 T flour

¼ tsp. salt

¼ tsp. pepper

 

Add chicken and shake until coated.  Place chicken in a baking dish, well sprayed with cooking oil.  Bake 400 for 30 minutes or until well done.

 

4 points per breast

WW Parmesan Oven Fries

4 large baking potatoes (about 2 pounds)

½ tsp dried whole thyme

½ tsp freshly ground pepper

Olive Oil Pam spray

¼ cup finely grated fresh Parmesan cheese

½ tsp salt

 

Cut each potato into three pieces and then into strips.  Pat wedges dry

 with paper towels and place in a bowl.  Add thyme and pepper and toss

well.  Spray with olive oil Pam and toss well to coat.  Arrange in a single

layer on a baking sheet coated with Pam.  Bake 450 for 30 minutes. 

 

Sprinkle cheese and salt evenly over wedges.  Bake additional

ten minutes or until tender and browned.  Serve warm.

6 servings – 3 points per serving

HUMMUS

3 garlic cloves, minced (more if you like)

1/4 cup plain low-fat yogurt

1 Tbsp fresh lemon juice

1 tsp olive oil

1/4 tsp salt

1/4 tsp paprika

1/8 tsp pepper

1 19oz can chickpeas, drained

Combine all the ingredients in a food processor and process until smooth. Chill.  12 points for the whole thing

Crockpot Chicken Stroganoff

 

1 pound frozen boneless, skinless chicken breasts

1 16-oz container fat free sour cream

1 can 98% fat free cream of mushroom soup

1 package Lipton onion soup mix (dry)

1 can mushrooms, drained

Garlic powder to taste.

 

Put the frozen chicken breasts in the crock pot.  In a bowl, combine sour cream, mushrooms, soup and soup mix, garlic powder, and stir until mixed.  Pour over the top of the chicken.


Cook on low for 7 hours or until chicken is so tender it falls apart.

 

Serve over rice, noodles or couscous.

 

Makes 6 servings, 4 points per serving.

Note:  This is so good you can make it for COMPANY and they won’t know it is a WW recipe.

 

 WW Crockpot Sour Cream Salsa Chicken

4 servings – 4 points per serving

 

4 skinless boneless chicken breast halves

1 pkg taco seasoning mix

2 cups salsa

1/2 cup light sour cream

 

Spray the crockpot with Pam.  Add the chicken breasts. 

Sprinkle with Taco Seasoning.  Top with salsa.  Cook on

low for 6-8 hours.  When ready to serve, remove the chicken

from the pot.  Stir in ½ cup of sour cream.

 

Cola Chicken

4 boneless chicken breast halves
1 can diet cola
1 cup ketchup
1 green pepper -- sliced
1 onion -- sliced Mix coke and ketchup together in a large pan.  Add onions and peppers.  Bring to a boil and add chicken breasts.  Simmer covered for about an hour.  Remove the chicken and cook the sauce with the lid off until it thickens.  Serve over rice.  4 points per chicken breast. 

 

Breaded Ranch Chicken

Servings-8 Estimated points per serving-4

Ingredients:   
3/4 cup corn flakes -- crushed
3/4 cup fat-free Parmesan cheese -- grated
1 envelope ranch-style dressing mix
8 chicken breast halves without skin -- boneless
1/2 cup nonfat margarine -- melted

Instructions:   
Combine corn flakes, cheese & dressing mix. Dip chicken

in butter & roll in corn flake mix to coat. Place in greased

13x9x2 pan. Bake uncovered at 350 for 45 minutes or till done.

KRUSTEAZ BRAN MUFFINS 

3 cups All-Bran Extra Fiber Cereal

2 1/2 cups water

1 1/2 tsp. baking powder

1 box Krusteau Fat Free muffin mix (cranberry orange, blueberry, apple, or any FF flavor)

 

In a large mixing bowl, pouw water over All Bran and soak for 5 minutes.  Stir in muffin mix and baking powder.  Mix well and batter WILL be thikc.  Line muffin tins with paper and spray with PAM; fill 3/4 full and bake at 400 for approximately 15-20 minutes.  Makes 24 big muffins.  1 point apiece and FULL of fiber.  :)

 

I often add extra blueberries to the blueberry mix and orange zest to the orange-cranberry ones.  If I am baking the apple ones, I add some apple pie spice of a Tbsp. of crushed pecans.  Just be sure and add the extra points.

 

These are SO good and their a staple in my house.  :)

Taco Casserole

45 points total for the whole thing

8 servings at 6 points each

10 servings for 5 points each

 

1 pound ground beef (15 points) 

1 can fat free cream of mushroom   (2 points)             

1 can fat free cream of chicken     (2 points)

1 bottle of pace picante sause (I get the way mild) (0 points)

2 bags of fat free mozzarella cheese (8 points)

1 bag of Light Doritoes (18 points)

 

You cook the hamburger, and while it’s cooking simmer the soups, picante sauce together.  Put one layer of chips in a casserole dish and crunch the remainder of the chips up in the bag and add them and your hamburger to the soup mixture.  Stir together.  Put one layer of the mixture over the chips in the casserole dish, add a bag of cheese, put remainder of the mixture in the pan, add other bag of cheese.  Cook at 375 degrees until it is all melted and bubbly. Is very good served with green beans and salad and French bread.
