Chicken zucchini bell pepper pizza pita bake

1~Baked crisp Kangaroo fat free wheat pita baked = 2 pts
2~ tbsp. Cheese sauce = 1 pt (you could use tomato sauce or pizza sauce too)
3 oz grilled chicken breast = 3 pts
Fresh zucchini
Fresh red bell peppers
Slice pita open so that you have two big round pieces
Spray Pita with Pam
Broil until golden brown flipping once.
I pre cooked my zucchini and bell peppers and chicken
Spread cheese sauce or tomato sauce onto bake pita bread
Top with hot veggies and chicken
YUMMY!
And all for 6 points Yep SIX!
Remember to always check your pita bread every brand is different

Penny’s Point Friendly Grilled Wrap.

What you’ll need (what I used)
1~ La Tortilla factory Tortilla (tomato basil) = 1 point
½ cup fat free refried beans = 1 point
1~pre made tostado shell = 2 points
1 oz. shredded chicken breast = 1 point
Cheese sauce (I used tostados cheese sauce) 2 tbsp. = 1 point
Fat free sour cream
Lettuce shreds
Salsa
Skillet
Pam
Placed chicken onto La tortilla.
Spread beans onto tostado then spread cheese sauce place bean side down onto tortilla and chicken.
Pull up side to look like picture above. You can put the lettuce in now or wait and put it on a bed of lettuce.
I heated the skillet sprayed with Pam and placed folded side down to cook first. This prevented it opened up while it cooked.
Cook until golden brown. Spray top with Pam and flip.
Place on a bed of lettuce or put the lettuce in before cooking. (the first one I made I put the lettuce in and it got welted)
I topped with a dollop of fat free sour cream and some salsa…
I also had 15 fat free Jalapeño Pringles for 1 point and some fresh tomato on the side.
Mine = 6 points

Pita Bakes with zucchini tomato and cheese.
This is what you’ll need if you want to try them
1~ whole Pita I take these wonderful Wheat Kangaroo Pitas I found that are 80 cal zero fat and 4 fiber for ½ the pita. So the whole pita is 160,zero fat and 8 fiber = 2 points
1~ Zucchini
1~tomato
¼ cup 2% cheese
Onion too if you like it
This is what you’ll need to do
Pita bread opened up into 4 pieces (yep the whole thing)
Oven on broil
Spray cookie sheet with Pam I even spray the pita a little
Broil for about 1 ½ to 2 minutes on each side. WATCH THEM so they don’t burn.
Set baked crisp pitas aside
Cut tomato and zucchini up
I zap my zucchini for about 4 minutes and then add the tomatoes and zap for another 2.
Placed cook zucchini and tomatoes on the cooked pitas sprinkle with cheese. Zap again in micro for about ½ min to a min

Greek Pita
pita (1 or 2 pts)
1 oz Feta cheese, crumbled (2)
fresh spinach
diced tomato
diced onion
banana peppers OR a few olives (1)
She sprays the pita with Pam and bake until cripy. Top with above ingredients and bake a few minutes more.

Veggie Scramble & Baked Yams
(Both recipes below)

This is what you need.
1 ~8 to 10 oz sweet potato washed not peeled. You can use a Yam or white potato too
1~ oven. Preheat to 450
1 ~ cookie sheet
Some Pam
Here’s what you do…
Cut sweet potato into wedges, chunks, fires or rounds
I did rounds 1/2 " thick or so
get out your cookie sheet, now the Pam.
Spray the cookie sheet with Pam really spray it good. You gonna really use her : )
Place cut spuds on sheet! Spray the tops with Pam…. I told you your are really gonna use her.
Sprinkle spuds with what ever seasoning your heart desires.
I like to use my spicy herb. Makes my sweet potaotes sweet and hot!
Bake for 15 minutes.

I cook my longer. I like them really crispy and golden brown.

I used to make these with egg whites but a friend said that she made them without and you know what?

Veggie Scramble
This is my favorite quick and easy meal.
1 cup ~ egg beaters 3 points you should always check the points on yours.
If you don’t have eggbeaters you can use regular eggs too. I’ve made it both ways.
2 cups ~ frozen mixed veggies (thawed or zapped in the micro)
Yep everything the broccoli the carrots the cauliflower and the peppers.
Everything but the kitchen sink! LOL : )
Whatever seasoning your heart desires. I like to use my spicy herb seasoning.
This is so easy
Pan, Pam
Heat pan, spray with Pam dump veggies in pour eggs substrate or eggs over veggies.
Cook, like scrambled eggs.

9-oz raw eggplant
1 items egg white (s)
1 Tbsp. whole-wheat flour
Pam cooking spray
Cut 9 oz raw egg plant into rounds (lay on side and cut into 1 " pieces)
1 egg white
1 to two table spoons of wheat flour
Beat egg white, cut egg plant, over with egg and lightly dab into flour both sides.
spray cookie sheet with Pam. Place coated egg plant on sheet. Spray tops with Pam
season with your of choice of seasoning.
I used a spice casserole one that I have that I really like.
Bake at 450 for 30 to 40 minutes turning once.
Yummy
You could top with salsa or tomato sauce too.
It would be really good with tomato sauce. hmmmmm, it would be really good with tomato sauce. Now that I think about it!!!

Chilled Espresso Custard
Serves 4
Complement your meal with coffee at its best—a simply
lovely baked custard of rich-tasting espresso.
Ingredients
1 1/2 cups 1% milk
2 eggs, beaten
3 tablespoons sugar substitute
2 teaspoons espresso powder or instant decaffeinated
coffee
1 teaspoon vanilla extract
Ground cinnamon, for garnish
Lemon twists, for garnish
Instructions
In a medium bowl whisk together the milk, eggs, sugar
substitute, espresso powder or coffee, and vanilla
extract until well blended. Pour into four 6-ounce
custard cups or ramekins and place in a 10" skillet.
Fill the skillet with water to 1/2" from the tops of
the custard cups. Bring the water to a boil over high
heat. Reduce the heat to low, cover, and simmer for 10
minutes. Remove the cups from the skillet, cover with
plastic wrap touching the surface of the pudding, and
refrigerate for 3 hours, or until chilled. Garnish
with the cinnamon and lemon twists.
