Main Dishes

Katrina's Fast Chili

1/4 cup rice

1 14 oz. can of white beans in tomato sauce

1/2 - 2/3 cup of frozen corn kernals

1/2 tsp chili powder

1/4 cup ketchup or a large squirt of it

1 medium sized white/yellow onion or two smaller onions

1 cup of water

Sautee the chopped up onions in about 1 tbsp of vege oil. When the onions start to get brown and opaque, dump in the beans, rice, corn, chili powder, ketchup, and water. Sprinkle with a dash of black pepper, salt, and alittle sugar. Combine everything and cook on medium low for about 25-30 minutes.

Tastes good on corn muffins or cornbread. We also like to spread this between two tortillas w/ cheese.


Homemade Hibachi Rice n Veggies

Credit: KML and Mom for taking me to the grill :)

(you don't need a hibachi, just a big skillet)

This serves two people as the main dish, or about 3-4 as a side item. (Very easily doubled)

1 cup rice

1/2 bag of wok mix (frozen)

1-2 tbsp soy sauce

2 eggs

2 tbsp vege oil

1/4 to 1/2 cup onion

Boil the rice in two cups of water with alittle salt, for about 10-15 minutes. set aside to cool.

Pour some vege oil in a skillet and sautee (on middle heat) the wok mix with onions. Sprinkle alittle salt if you want.

Now dump the rice in the skillet, and break open the eggs over it all.

Mix it all together and cook until egg is cooked. Now add the rest of the vege oil and now the soy sauce. Cook on medium heat for about another 5 minutes then it's ready to be served.


Katrina's Easy Homemade Mac and Cheese

2 cups Cheese Sauce (just double Hillbilly Housewife's white sauce recipe, and then scroll down to find her cheese sauce recipe)

1 cup macaroni

1 can tuna (I used albacore)

1) On one burner boil the macaroni until it is soft

2) On another burner, make the cheese sauce. (You can use any cheese)

3) Preheat oven to 190C or around 370F. Grease up a cassarole dish too while you're at it.

Now drain macaroni, put in cassarole dish. Now add the drained can of tuna. Now add the cheese sauce and mix everything together.

Cook for about 15-20 minutes or until the top is golden brown.

This recipe makes about 4 small servings, but can easily be doubled if you're making it for the main meal.


Biscuit Ham Melt

Hillbilly Housewife's Drop Biscuit Recipe (scroll down towards bottom of page to see it)

Cook Hillybilly Housewife's recipe exactly, except shape dough into a rectangle. It will cook just fine that way.

Let it cool, then using bread knife cut through big biscuit ( it should look like a hamburger bun, a top and a bottom).

Butter (if you want) top and bottom of the biscuit. Layer cheese, and then layer ham.

Put biscuit top back on and back at 190C or 370F for about 10- 15 minutes. Serve hot. Serves 4


Kat's Quick and Easy Pot Pie

1 bag frozen vegetables

1 bouillion cube

1 can of tuna (I used chunky albacore)

Uncooked biscuit dough (You can use storebought biscuits or use Hillbilly Housewife's recipe, I recommend hers highly! I use the drop biscuit recipe located at the very bottom of the page.)

1) Preheat oven to 220C or 430F.

2) Boil frozen vegetables for about 5-8 minutes until done. Drain and set aside.

3) Boil 2 cups of water, add bouillion cube.

4) Oil a casserole pan, and add drained tuna, vegetables and then bouillion. Also add a couple dashes of soy sauce if you desire. Now mix the vegetables/tuna around.

5) Now take uncooked biscuit dough and "drop" onto top of vegetables. Part of the dough will sink in, that's okay. Try to lay the dough all around on top of the vegetables in bouillion. The biscuits will become the crust of the potpie.

6) Stick the mix in the oven, just until the biscuit top starts to turn a light brown. When the top looks this way, drop your oven heat to about 200C or 290F.

7)Cook until you see the vegetables in bouillion start to boil, remove immeditaly.

This is best served warm, and will reheat without a problem. The vegetables will thicken up in about 5-7 minutes.


Quick and Easy Vegetable Bean Soup

1 can white beans (15 oz) (or use 2 cans for a more beany soup)
1 bag frozen vegetables (I like using a corn-pea-red peppers mix)
3 tbsp pasta sauce or a big squirt of ketchup
3 hot dogs chopped
half an onion chopped
2 bouillion cubes, any flavor

1) Bring 6 cups of water to a boil, add bouillion cubes.
2) Add beans, pasta sauce, hotdogs, onion, and vegetables. Mix well.
3) Bring soup to a 'raging' boil and then turn onto low heat, simmer for about 30 minutes.

This soup serves 6. It tastes great with biscuits or crackers!

Tortilla Hot Dog Wrap credit: KML

1 Tortilla
1 or 2 hotdogs or sausage
3 slices of cheese
some butter or margarine

Butter one side of Tortilla. Cut up sausage into small pieces and sprinkle over buttered side of tortilla. Lay cheese on top of hotdogs. Fold the tortilla under and microwave on high for about 1 minute 15 seconds. Caution: WILL BE HOT!! This is a good little late night snack. It's very filling!

Simple Vegetable Spaghetti credit: My Dad :)

Frozen vegetables (I use the Asian kind with water chestnuts and sugar peas)
Spaghetti
Spaghetti Sauce (butter is optional)

Boil spaghetti in salty water until it's tender.

While spaghetti is boiling, heat up a skillet and pour in some vegetable oil. (Olive oil is fine too, whatever you fancy.) Keep the skillet at a medium temperature, and throw in the frozen vegetables. (I don't thaw them before, I let them melt in the pan.) Sprinkle salt on them and sautee them until they are crunchy and slightly browned.

Drain the pasta and mix the vegetables into it. Heat up the spaghetti sauce in the microwave and then add on top of the vegetable pasta.

Whala! A simple meal that is very filling. It reheats very well also if you have leftovers!

Tuna Patties credit: KML

1 can tuna (drained)
1 egg
5-10 crackers or a piece of REALLY dried toast broke into pieces
3 tablespoons mustard
dash of salt

Heat skillet (Teflon, cast iron, anything should work fine) to medium-low heat.

Mix all your ingredients together, adding dash of salt. Form into a patty and fry in the skillet. About 2-4 minutes per side or until patties are dry. Yields 4 large patties or 6 smaller ones. These can be served hot with ketchup or can be chilled in the fridge.

Easy Egg Casserole credit: My Mom

12 eggs beaten
1 1/2 pound ground sausage
16 oz shredded cheddar, divided
7 slices bread, torn into pieces

Preheat oven to 350F or 175C. Brown sausage in a large skillet over medium heat. Drain well. Set aside to cool. Pour eggs into lightly greased casserole pan. In separate bowl, combine sausage, bread, 12 oz of cheese (3 cups). Mix well, pour into egg mixture. Top with remaining cheese. Cover top with foil, sealing edges. Bake 15 minutes, uncover, and then bake until brown and bubbly.

Notes from Mom :

You can use any cooked meat, leftovers, tuna, chopped sausage, etc.
To lesson cholesterol worries, use 4 whole eggs and 8 egg whites instead.

Spaghetti Soup credit: KML

3 cups water
1 bouillon cube (beef is best)
1-2 cups macaroni
5 pieces of garlic chopped (6 dashes of garlic powder is okay)
8 oz tomato paste or 4 oz tomato paste with some ketchup squeezed in
Italian seasoning (aka basil, thyme, rosemary etc)

Add tomato paste to water ( you can also add a finely peeled and chopped tomato if you wanted), plus garlic and Italian Seasoning. Boil for about 5 minutes, then add pasta and bouillon cube. Boil until pasta is soft. Let stand for about 10 minutes until the soup is firmer. Serve with garlic bread or cheese on top for a thicker soup. Serves 3 people but can be easily added to.

Gnocchi credit: My Mom

2 medium potatoes
2 cups flour
1 egg

1) Bring large pot of salted water (1 teaspoon salt) to boil. Peel potatoes, add to pot. Cook for 11-15 minutes. Drain, cool, and mash with a fork.

2) Combine mashed potatoes with flour and egg in large bowl. Knead until dough forms a ball. Shape small amount of dough, one at a time, into rope snakes, cut into half an inch pieces.

3) Bring pot of salted water to boil, drop in Gnocchi, cook 3-5 minutes. Gnocchi will rise to top of water when done.

4) Drain and serve with butter or whatever sauce you please. Serves 4.

Pizza Sandwich credit: KML

When you want something fast but you don't want to cook a big meal.

Toast 2 pieces of bread. Then layer one toast with ketchup, then add cheese, pepperoni (or salami), more cheese, then spread ketchup on the underside of the top toast. Microwave for 30 seconds until you see the cheese bubble. This is a great snack and is very cheap and filling.

Mom's Yankee Baked Beans credit: My Mom

1 (15.5 oz) can of pork and beans
1/2 cup ketchup
1/4 cup brown sugar
1 teaspoon mustard
1 small onion minced or use onion powder
1/4 cup dark molasses (honey can make due in a pinch)
4-5 slices of cooked bacon.

Mix ingredients in 2 quart casserole pan. Bake at 350F or 175C for an hour uncovered.

Italian Tuna Casserole credit: KML

2 cups elbow macaroni
2-3 cups pasta sauce
2 cans tuna, drained
10 crackers all crumbled

Preheat oven at 190C or 375F .

Boil macaroni in salted water until it's done. Grease up a casserole pan and add strained macaroni. Add tuna, pasta sauce, a dash of sugar, and mix in with pasta. Add crumbled crackers on top of pasta, add some slivers of butter if desired.

Cook for 15-20 minutes, serve hot. Serves 5-6.

Breakfast Casserole credit: KML

3 eggs beaten
2 cups macaroni or any pasta
2 medium sized potatoes, chopped or diced
Garlic and Onion
2 cans of tuna drained

Boil the macaroni in salted water. Grease up a casserole dish and preheat your oven for 190C (or 375F). When the pasta is done, drain and stick in casserole dish. Saute the potatoes in vegetable oil with the garlic and onions until crisp. Add the potatoes and garlic/onion into the casserole also. Add tuna and eggs, then mix everything really well together. You can also sprinkle some cheese on top or lay slices.

Cook for about 15 minutes, it comes out good and it can be easily doubled.

Biscuit Pizza Crust credit: My Mom

This is a great recipe for pizza crust! My mom learned it when she was a newlywed and she taught it to me! This recipe is great if you don't have any yeast or baking soda to cook with, it's very versatile.

2 cups flour
1/2 cup margarine or butter
1 teaspoon salt
1 tablespoon sugar
1/4 cup vegetable oil
4-6 oz of water (I just add water from the sink for about 3 seconds)

Mix ingredients together, and bham! you have pizza dough! If the dough is sticky, you can just grease up your hands or add alittle more flour. I end up with enough dough to make about 4 little personal sized pizzas.

Finnish Tuna Pineapple Pizza (this is a staple at our house)

Preheat over to 200C or 390F. Make pizza crust from above recipe and form into pizza crusts on baking paper. You can use ketchup or pasta sauce for the pizza sauce. Add as much drained tuna as desired to pizzas, then add pieces of pineapple also. Cover with any kind of cheese you want and bake for about 10-18 minutes. This pizza is very cheap and yummy!


Desserts

Finnish No-Flip Pancakes credit: Finns for making it, Mom for finding it! :)

3 eggs
1/2 cup sifted flour
1/4 teaspoon salt
1/2 cup milk
2 tablespoons melted butter

Preheat oven for 190C or 375F. Beat eggs until well blended, Slowly add flour, beating constantly. Stir in salt, milk, and butter. Grease pan and pour batter into cool casserole pan or skillet. Bake for 10-15 minutes or until top is dull, brown, and puffy. Serve with fruit jam or whipped cream.

Easy Southern Iced Tea credit: Found Online

3 family sized teabags or 7 small ones
2 cups cold water
1 cup sugar or Splenda

Place 2 cups of cold water in a pot and add teabags. Bring to a boil, DO NOT continue to boil. Remove from heat and let the tea steep. Pour warm tea into empty pitcher. Add the sugar and stir until dissolved. Fill rest of pitcher with cold water.

No Egg Cake credit: Great Depression Recipe

1 1/2 cups flour
1 teaspoon baking soda
1 cup sugar
half a teaspoon salt
3 tablespoons cocoa
1/3 cup vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
1 cup water

Preheat oven to 190C or 375F.

Mix together flour, baking soda, sugar, salt, and cocoa. Grease up a casserole dish and add this mix into it. Use a spoon and make 3 holes in the mixture. In each hole add one ingredient, oil, vinegar, and vanilla. Pour water over all and mix. Bake for about 20 minutes.

Easy Icing Recipe credit: Found Online

2 tablespoons butter
2 tablespoons powdered sugar
2 tablespoons already sweetened cocoa

Heat up butter until it melts, then add cocoa. Add sugar, and then more if needed to sweeten. Beat with eggbeater until thick. This icing can be easily duplicated.

Easy No Egg Pie Crust credit: Found Online

1 1/2 cups of flour
1/2 cup of vegetable oil
2 tablespoons milk
2 tablespoons sugar

Preheat oven at 425F or 218C. Mix flour and sugar together. Mix oil and milk together, then add to flour mixture. Mix well with a fork. Pat on sides/bottom of cake pan. Poke sides/bottom of crust with a fork and then bake for 12-15 minutes. Once cool, then you can add whatever you want for a pie in it.

Easiest Peanut Butter Cookies Ever credit: Found Online

1 cup peanut butter
1 cup sugar
1 egg beaten

Preheat oven at 350F or 176C. Warm pb in microwave, stirring until melted. Stir in the beaten egg and sugar. Form into 1 inch balls and place on cookie sheet. Press lightly with a fork. Bake for 8-10 minutes until golden brown.

Peanut Butter Crumble credit: KML

This is a good alternative if you don't have much pb, and this stuff comes out delicious!

1-3 tablespoons peanut butter.
1 egg
1 cup sugar

Preheat Microwave pb until it is melted. Then add UNBEATEN egg and sugar, mix well. The batter should look runny and sticky. Pour onto baking sheet and cook at 356F or 180C for about 7 minutes. This stuff comes out so warm and chewy from the oven, it's delicious!

Crumbly Sugar Cookies credit: Found Online

EXCELLENT for bulk-cooking.
These things freeze like magic!
I once made 50 cookies at one setting and it barely took any effort.

1/2 cup butter (7 tablespoons)
1/2 cup sugar
1 teaspoon vanilla flavoring
1 egg yolk (keep egg white separate)
1 cup flour

Preheat oven at 350F or 176C.

Combine ingredients (except egg white) until well blended. Shape into small, flattened balls and place on cookie sheet. Beat egg white lightly with a fork, Dip fork in egg white and press cookie lightly.(I just use my finger to dip in the egg white, much faster and does the same trick.) Sprinkle with additional sugar. Bake for 8-10 minutes until lightly brown.


Condiments

Easy Cooked Mayo credit: MLee

2 egg yolks
2 tablespoons lemon juice
2 tablespoons water
1 teaspoon dry mustard
pepper to taste
1 cup very light olive oil

1. In small saucepan, stir together egg yolks, lemon juice, water, mustard, and pepper until mixed.

2. Cook over very low heat, stirring constantly. When mixture bubbles in a few spots, REMOVE FROM HEAT. Let stand 4-5 minutes.

3. Pour into blender or mixer. Mix on high or equal to it. SLOWLY add oil. Mix until thick and smooth. (Will need to stop and start to scrape sides down to get an equal mixture)

Note from Katrina: I just used a whisk since I don't have a blender and it worked just fine! (Thanks Mom! :) )
