Tortilla Soup
16 ounce
can tomatoes

1 medium white onion, diced
2 large clove's garlic
4 tablespoons cilantro
1/2 teaspoon sugar
8 cups chicken broth
1 1/2 lbs chicken breast diced
3 chipotle peppers (smoked jalapenos)
1 tablespoon adobo sauce
shredded Monterey jack cheese
2 avocados diced
Tortilla chips
Sour cream
Place tomatoes, onion, garlic, sugar and cilantro in food processor and
blend until smooth. Place sauce into a large pot adding chicken broth and peppers. Bring to a boil, reduce heat, cover and simmer
for 30 minutes. Strain soup through cheese cloth. Place strained
soup back into pot and return to boil adding uncooked chicken breast.
Simmer for an additional 30 minutes. Place broken tortilla chips in a bowl along with shredded
cheese, and diced avocado. Ladle soup over chips, cheese and
avocado. Place spoonful of sour cream on top of soup. Insert chips around
perimeter of bowl and sprinkle shredded cheese over the top.
