Tequila Shrimp & Scallops

 

 


 


2 Tablespoons extra virgin olive oil
1 medium onion diced
3 gloves of garlic diced
10 - 12 medium to large shrimp butterflied
10 - 12 sea scallops
3 roma tomato's
1 tablespoon cilantro
1 avocado diced
1/4 cup tequila (CUERVO)
Juice of 2 limes
Sauté onions and garlic in olive oil till onions are translucent. Add the shrimp and scallops and sauté for 3-4 minutes. Add the tequila and flame.
Add the tomato's and sauté for 3 minutes. Add lime juice. Continue cooking till shrimp and scallops are cooked (approx 7-8 minutes total including times listed above). When shrimp and scallops are cooked add avocado and cilantro. Season to taste.
