| Cherokee Yam Cakes (biscuits)(submitted by ~*~Willow~*~) |
A Native American recipe to add to your table. Yummy with honey and butter!
1 cup mashed sweet potatoes or yams
2 cups sifted flour
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
2 1/2 teaspoons baking powder
1/2 cup oil
1/2 cup milk
1. Sift flour, baking soda, sugar and salt into a bowl.
2. Pour oil and milk into a measuring cup (do not stir).
3. Add to yams and blend well.
4. Add to flour mixture and mix lightly with fork (until mixture holds together) Turn dough out onto a floured board and knead until smooth (about 12 kneading strokes).
5. Roll dough about 1/4" thick and cut into rounds with floured biscuit cutter (or rim of drinking glass) Place rounds on a baking sheet.
6. Bake at 425º for 10-20 minutes.
7. Serve hot, or split when cold and toast.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup honey
3 eggs, beaten
1/2 cup milk
1-1/2 cup plus 1 tablespoon unbleached flour
2 teaspoons baking powder
1/8 teaspoon salt
1 cup fresh blueberries
Preheat oven to 350 degrees. In a mixing bowl, cream together butter, sugar and honey. Beat in eggs and milk. Sift in 1-1/2 cups of flour, baking powder and salt. Combine thoroughly. In a small bowl, toss berries with remaining flour. Gently fold berries into the batter. Pour batter into a 5x9 inch loaf pan. Bake for about 1 hour until the cake is golden brown and a knnife inserted into the center comes out clean. Serves 6 to 8. |

Ingredients:
2 cups flour 3 teaspoons baking powder 1 teaspoon salt 1/2 cup dry milk 1 egg 1 cup warm water
Preparation:
Mix the dry ingredients together, mix the egg and the water, add to the dry mixture. Add flour or water to adjust mixture to a very soft dough mixture. Put dough on a well floured board. Roll out to about a 1 inch thickness. Let set for about 15 minutes. Cut into what ever size you would like Batter makes about 25 pieces. Deep fry in hot oil, just enough to brown on each side. Put on a paper towel to get some of the top oil off the bread. |
