Great site Ken! I share your (lonely) passion for making beer the best I possibly can. In particular, I really appreciate your insights on controlling pH in the mash, sparge, and kettle. My first all grain batch was an epic fail, but I am going to try again paying close attention to pH, temperature of the sparge, fresh grain, and cold pitching the proper amount of yeast. I live in Sugar Grove, IL, not too far away from you!

I am from Australia and I must say how refreshing it is to find a site with such good information and recipes that are both practical and believable.
Another point I like is that your beers are not big fruity hop monsters like seems to be the norm at this point in time.
I have made a couple of your recipes and they have been great. My favourite being the Munich Helles.
I enjoyed your comments on Brewing Water and have adopted some of your practices with the results that have caused a great improvement to my lagers and pilseners.
I hope to tey the red ale in the future.

Great site and information. Saw some of your posts on other forums which led me to your site. I'm a new brewer (extract-only so far) but wanted to try your Moon Man-inspired recipe. How would you suggest I modify that from all-grain to extract?

I brewed a partial mash version of your Hacienda Lager this summer. I fell in love with Victoria when I went to Mexico for the first time 2.5 years ago, and this is pretty darn close. I love it, and I'm sharing it with my brewers' guild this afternoon. Thanks!
