TEXAS SHORT RIBS    SIRLOIN PEPPER STEAK    STUFFED CABBAGE

CARIBBEAN STEAK RECIPE

Recipe Shopping List:
3 lbs. London broil
1/3 c. orange juice
1/4 c. dry red wine
1 tbsp. vinegar
2 tbsp. vegetable oil
2 cloves garlic (crushed)
1 1/2 tsp. lite salt
1/2 tsp. Tabasco sauce
1/2 tsp. ground ginger
1/2 tsp. tumeric
1/2 tsp. dry mustard
PREPARING YOUR RECIPE

Combine marinade...wine,orange juice,oil,
vinegar,crushed garlic,salt,Tobasco,
tumeric ginger and mustard.(mix well)
Marinate...steak in refrigerator
for 3 hours.
Broil...steak on grill
or in oven basting with marinade.
Serve...indoors or out

TEXAS SHORT RIBS

Recipe Shopping List:
3 lbs. lean beef short ribs
3 tbsp. chili powder
1 c. tomato juice
1/2 c. vinegar
1 tbsp. onion powder
1 tbsp. brown sugar
1 1/2 tsp. lite salt
1/2 tsp. oregano
1/2 tsp. garlic powder

PREPARING YOUR RECIPE

Combine marinade...all
ingredients except ribs (mix well)
In bowl...pour marinade over ribs
and cover.
Marinate...beef ribs in refrigerator
covered in bowl for 10 hours.
Preheat oven...to 400.
Place ribs...in baking pan pour
marinade over ribs
Bake...1 1/2 hours basting
frequently with marinade.
Serve...indoors or out

SIRLOIN PEPPER STEAK

Shopping List:
2 1/2 lbs sirloin steak, 1 1/2 inches thick
1/2 c. butter
1/4 c. chopped fresh parsley, or 4 tsp. dried
1/4 c. minced onion
2 tbsp. Worcestershire sauce
1 tsp. freshly ground black pepper
1/2 tsp. dry mustard

PREPARING YOUR RECIPE

Preheat grill...score the edges of the steak
at 1 inch intervals.
Combine...butter, parsley, onion,
Worcestershire sauce,pepper,
and mustard in a small saucepan.
Heat...stirring constantly until butter melts
Reserve 1/4 of the mixture
Place... steak on the grill and brush with mixture
Grill...baste with butter mixture,
cook about 6 minutes a side for medium.
Serve... on platter top with
reserved butter mixture.

STUFFED CABBAGE RECIPE

Recipe Shopping List:
1 head fresh cabbage
1 lb. lean ground beef
1/4 c. cooked whole grain rice
1 egg
1 onion , chopped
1 tsp. lite salt
1/2 tsp. pepper
1 16 oz. can sauerkraut , drained
1 16 oz. can tomatoes

PREPARING YOUR RECIPE

Steam...cabbage until soft
Separate...and trim leaves
Combine...beef , rice , egg,
onion , salt and pepper.
Shape....into approx. 2" balls
Wrap...balls with cabbage leaves
Layer....bottom of 9 x 9 baking pan
with sauerkraut
Place....cabbage balls on sauerkraut
Top with....tomatoes.
Bake....covered at 250 degrees for 2 to 3 hours
to desired browning.
Yields....4-6 servings.
RECIPE TIP:
Remove the rib from each cabbage leaf for faster cooking and
a more tender meal.You may use toothpicks to hold your cabbage rolls together.
For an edible decorative touch tie them with scallion onion greens.
