Nanny Fraioli's Peach Cake Recipe

2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder
Dash of salt
4 1/2 tablespoons margarine (not spread), melted (plus more to dot on cake)
1 egg
Milk
Fresh peaches, peeled and sliced (recipe tested with 4 small peaches)
Cinnamon
Sugar
Combine flour, sugar, baking powder, salt and margarine in a large bowl. Break egg into a 1-cup measure; fill with milk to three-fourths full (6 ounces). Add egg and milk to bowl. Stir until blended. The dough may be sticky.
Push dough onto a cookie sheet and spread it out. Place rows of fresh peach slices on top of dough. Top with a mixture of cinnamon and sugar. Dot with margarine. Bake at 375 degrees until dough on bottom is light brown, approximately 30 minutes.                 Photo of John's wife Nancy

Note: Although the recipe is called a cake, it is made from a dough rather than a batter, and is similar in appearance to a dessert pizza. When it is done, the top of the cake between the peach slices will be soft.
