Berry and Coconut Salad,  Stewed Fruit Compote, Mango & Strawberry Yogurt paddle pops, Almond Surprises

 

 

Berry and Coconut Salad

Gluten free, Low carbohydrate, Low fat, Low sugar, Wheat Free

Ingredients:

1 cup coconut flakes
1 tbsp maple syrup, (pure maple syrup, not the flavoured kind)
1 punnet blueberries
1 punnet strawberries
1 large mango
2 kiwifruit
1 200g tub thick set organic natural yoghurt, (sheep's is great)

Preparation:

In a dry frying pan toast the coconut flakes in the maple syrup until golden.

Method:

Wash and cut the fruit. Fill a metal cutter with the fruit. Add a layer of yoghurt and top with toasted coconut. Repeat until all 4 are made.

Note: Berries rank number 1 top antioxidant foods you can eat. Wild berries supply even more antioxidants so if you're lucky enough to stumble upon a bush.

Makes 4 servings

Stewed Fruit Compote

Dairy free, Low fat, Wheat Free

Ingredients:

1 cup dried apricots
1 cup dried apples
1 cup dried pitted prunes
½ cup dried figs
2 cinnamon sticks (or large pice of cassia bark)
1 lemon zest and juiced

 

Method:

Put the dried fruits in a saucepan and pour over enough water to cover them. Add the cinnamon sticks, lemon zest and lemon juice and slowly bring the mixture to a boil, then simmer over a low heat for 50 minutes or until the fruit is tender but not falling apart.
Allow to cool, remove the cinnamon sticks or cassia bark and serve. The compote will keep in the fridge for up to 5 days.

Makes 6 servings

Mango & Strawberry Yoghurt Paddle Pops

Gluten free, Low carbohydrate, Low fat, Low sugar, Wheat Free

Ingredients:

1 punnet strawberries
2 tbsp honey
3 mangoes(or 6 frozen mango cheeks)
4 tbsp natural sheep's yoghurt

Method:

Puree the strawberries and mango flesh with the honey in a blender until completely smooth. Add the yoghurt and fold through. Pour the pure into ice block moulds and cover with the tops.
Freeze overnight.

Strawberries are high in salicylates, which can cause a reaction, especially in toddlers. For that reason it's best not to give strawberries to children under 12 months.

Makes 8 servings

Almond Surprises

Dairy free, Low carbohydrate, Low sugar, Wheat Free

Ingredients:

½ cup almonds, finely ground
¼ cup roasted almonds or walnuts, finely chopped
¼ cup almond butter
2 tbsp maple syrup
1 tbsp carob powder
½ tsp vanilla essence
¼ cup desiccated coconut

Method:

Add all ingredients together except for the desiccated coconut. Mix thoroughly with a wooden spoon or knead ingredients together. Place coconut onto a plate and remove a teaspoon of the almond mixture. Roll into a small ball and then roll in the coconut to coat. Place onto a plate and serve.
