Cheese Enchilada Pizza

4 small corn tortilla(s)
1/4 cup Old El Paso Green Chilli Enchilada Sauce
2 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product
1/4 cup fat-free sour cream
1/4 cup salsa
Mix all portions of Fat Free Sour Cream and Enchilada Sauce until well blended.
Onto each tortilla spread a small mixture of sour cream/enchilada sause as you would do sauce onto a pizza crust.
Cut 1/2 ounce Velveeta into small pieces and place around tortilla, repeat for other tortillas. Place on top of each other, and cover with remaining FF Sour Cream/Enchilada sauce. Place in microwave high setting for three minutes.
Garnish with Salsa and shredded lettuce.
Zero Points Brownies

1/4 cup Egg Beaters Egg Beaters
2 tsp vanilla extract
3/4 cup unsweetened applesauce
1/4 tsp baking soda
1/2 cup unsweetened cocoa
1 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
1/4 tsp kosher salt
2 Tbsp light butter
1/2 cup whole wheat flour
Melt butter. Mix all ingredients together. Spread in 8x8 pan, sprayed with Pam. Bake at 350 for 25 minutes.
Tastes good with a little Cool Whip Free on top, which is also 0 points. Two servings is 1 point.
Simple and Yummy Chicken
Crush up 4 ritz crackers and mix in a baggie with 2 tbsp parmasean cheese. Wet chicken breast and roll in mixture. Pan fry in oil each side for 6 minutes(or until done). Melt chive or garden vegetable cream cheese(I used reg cuz they didn't have any light) drizzle over chicken breast.
Fruit Salsa

3 Tbsp Preserves (strawberry or raspberry)
2 Golden Delicious apples
4 medium kiwifruit
2 cups raspberries
1 pound strawberries
1 Tbsp unpacked brown sugar
2 Tbsp granulated sugar
Chop all fruits in tiny pieces. Mix together with sugar, brown sugar, and preserves.
Store refrigerated in an airtight container.
Makes about 5 cups. 1/2 cup per serving.
Good with cinnamon-sugar tortilla chips: Cut small flour tortillas into wedges (pizza cutter works well). Place on a baking sheet, spray with cooking spray, and sprinkle with cinnamon/sugar. Bake at 350 about 10-15 minutes or until crisp. Sorry, I haven't figured out the points or serving size for the chips yet. This would also be good served over ice cream or angel food cake.
My husband says they're good with just regular baked tortilla chips too. I haven't tried that yet, but I imagine it gives that sweet-salty flavor.
I'm not sure how long it keeps, but I had it for 4 days and it was still good.
Stuffed Mushrooms
1 wedge The Laughing Cow Light Creamy Garlic & Herb
1 item bell pepper(s)
1 small onion(s)
14 medium mushroom(s)
1/4 cup Progresso Italian-Style Breadcrumbs
chop and sautee peppers, onions, and stems from mushrooms in Pam...once soft add all other ingredients and stuff the mushrooms. Bake at 375 for 20 minutes.
I sprinkled mine with fat free Italian cheese blend right before they were done baking. I also only used about 1/4 of the onion and the pepper. I have not calculated the pts for this recipe. ....great appetizer or snack.

Stawberry Jello Cheescake
1 8 oz package cream cheese softened
1/3 cup sugar
2 cups thawed stawberry cool whip
graham pie crust
1 cup sliced strawberries
Beat cream cheese and sugar in a large bowl with electrc mixer on medium
speed until well blended. Gently stir in whipped tipping.
Spoon into crust.
Refrigerate 3 hours or until set. Top with strawberries just before serving

Chicken Baseballs

3 oz. fat free cream cheese, softened
2 tsp light margarine, melted
1/4 tsp salt
1/4 tsp pepper
2 Tbsp chopped onion (suggest increasing this amount)
2 cups cubed, cooked chicken
1 8oz can reduced fat crescent rolls
2 Tbsp skim milk
In a blender (or by hand) combine cream cheese, butter, salt, pepper, milk, onion. Blend. Pour mixture over chicken and stir. Separate crescent roll dough into four rectangles and seal perforations. Spoon 1/2 cup mixture into center of each. Pull opposite corners of dough to center and seal. Place on ungreased cookie sheet and bake at 350 degrees for 20 minutes.
Cheesy Chicken Cups
Yields: 10 servings (Serving: 1 chicken cup) for 2 points each
INGREDIENTS:
1 can buttermilk biscuits (10 biscuits)
1 cooked chicken breast cut into small pieces
1 can Healthy Request cream of chicken soup
2/3 C. fat free shredded cheddar cheese
1 t. dried parsley flakes
1/2 t. black pepper
INSTRUCTIONS:
Place each biscuit into a muffin pan. Press the biscuits into the holes (and up the sides) to form cups. In a bowl, combine chicken, soup, cheese, parsley, and pepper. Mix well. Spoon evenly into cups. Bake at 400 for 12-15 minutes.
Crusted Honey Mustard Chicken

| We added a twist to these baked - not fried - chicken breasts by coating them with honey mustard before dipping them into cereal crumbs. They're so crisp and tasty, they'll easily become a family favorite! |
- 2/3 cup lite honey mustard dressing
- 1/8 tsp table salt
- 1/8 tsp black pepper
- 2 tsp dill, freshly chopped
- 1 medium scallion(s), finely sliced
- 1 cup cornflake crumbs
- 1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces
Instructions
- Preheat oven to 425°F.
- In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.
- Place corn flake crumbs in a shallow bowl. Dip chicken breasts into dressing mixture, then corn flake crumbs. Place into shallow baking pan coated with cooking spray.
- Bake until chicken is golden and no longer pink, about 15 minutes.
- Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve.
Crunchy Ranch Chicken
Servings 4 or 5
4 points per serving
1/3 cup Corn Flake crumbs
1/4 cup reduced fat Parmesan Cheese
1 packet Hidden Valley Ranch Dressing Mix (for a great variation, try Fiesta Ranch)
4 boneless, skinless chicken breast halves
Preheat oven to 350°F. Spray a 9x13 inch pan with nonstick cooking spray. Combine corn flake crumbs, cheese and dressing mix. Spray chicken with butter flavored Pam, then roll in corn flake mixture to coat. Place chicken in prepared pan and bake uncovered for 45 minutes or until done
