Well, I am exhausted and it has only just begun!! The 3 kiddos were sick, then Jason and I were sick, and the Valentine Tea at church this Sunday (that I am in charge of) has grown to over 100 ladies!! I have had my lists made forever...once you know me, you understand that I can't do ANYTHING without making a list...so I am in good shape, but feeling overwhelmed! I have to make chicken salad and cut up fresh fruit for all those ladies! Fortunately I have lots of great help, but I am tired with just the idea of all this work coming up! With that being said, I have tried only one new recipe lately. I made the blueberry yogurt muffins. I was disappointed but I also didn't follow the directions. We were all feeling pretty bad so instead of the low fat vanilla yogurt I used plain fat free, and in place of orange juice I used apple cider. I just didn't want to have to go to the store to get the right ingredients. I will definitely try these again, the ones I made were not sweet enough and I accidentaly overbaked them a little. I used mini-muffin pans and lost track of time!! I did top them with a powdered sugar glaze in attempt to fix them, but still I was unhappy with them. They were more bread-like in texture than cakey muffins. Maybe the lack of fat from subbing fat free yogurt? Could be. Like I said, I will give them another shot with the RIGHT ingredients. I made good old chicken pot pie last night, and used some leftover taco meat to make a beef and cabbage soup for Jason's and my lunches. (I just added the taco meat to a half a large bottle of V8, a can of kidney beans, half a green pepper and half an onion, diced, a can of stewed tomatoes, and half a bag of coleslaw mix. Seasoned with a little garlic salt and lots of black pepper) Tonight I am going to try the BBQ meatloaf and broccoli casserole recipes on my "to try" list. I will probably put a slice or two of bacon on the meatloaf just for fun! WOO HOO!! I will let you know how they turn out!! And thanks to all of you for sharing your reviews with me!! I can't believe my website has been up for 48 hours and has almost 2000 visits!! Who would have thought?!?!? It is far from being finished. Eventually I would like to have the recipes on separate pages according to course and even a recipe index (if possible). Please be patient with me!! I am a website newbie for sure!!
I don't know how to start to thank everyone for the compliments and kind words! It just kind of started out as finding and sharing some tasty recipes, and quickly has turned into a website full of info!!
