We are asked alot about cooking with goat meat. My family's favorites include the following. . .
Pulled Goat BBQ
This is a pretty simple recipe but one that doesn't last long at our house. I use a nice leg of goat or a nice goat roast and put it in my crockpot with just little water. Now, a little water, that means that I cover the bottom of the crockpot. I put the lid on and cook the roast on low for 6 hours or so (for me, it is while I am at work). When I come home, the roast is fully cooked and falling off of the bone. Because there is very little fat, I pull the meat into shreds and add a bottle of my favorite BBQ sauce. For us, it is Bullseye but we all have our own taste buds. I let that cook on low until the boys are ready to come in to eat (usually after the chores are completed). To finish it out, slaw and fries make an excellent meal.
Grilled Billy Burgers
This is another family favorite - our local locker prepares our ground goat into wonderful patties. I thaw these out and marinate in BBQ sauce and cook as you normally would a good ol' beef burger. Yum, Yum
Grilled Goat Sausages
Once again our local locker creates wonderful goat link sausages. I BBQ these on the grill (usually steaming them as I grill). They have a nice flavor and rival any of the brats or metts in these parts. They are also great re-heated, if there are any left!
