We have 100 beautiful acres located on St Joseph Island Ontario. Our lot has many healthy maple trees and this spring we plan to put in 2500 taps. In the near future we hope to run 5000 taps. Once the sap starts running and the boiling starts I will add pictures of our operation.
We boil our sap over a wood fired arch so you get that unique, lovely flavor that only comes from syrup made over a wood fire. We are a family of 6 and we run the operation ourselves as a family. It's a lot of work but who can complain about being in the "great outdoors"? All that fresh air!
We built on a hill because right now we are just gravity feed. Once finances come in we can upgrade to a vacuum system and eventually a R.O. to help speed up the boiling process and increase production.
| Lots of work to do to get this place in ship shape but at least the evaporator is in place and almost ready to do it's job.
