Apple Cider Syrup
Makes two cups
This just tastes like New England!
Be sure to try it in the fall, on top of pancakes or French toast!
1/4 C. (60 g) sugar
2 T. cornstarch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 C. (500 ml) apple cider or apple juice
2 T. lemon juice
2 T. butter
sour cream
In a medium saucepan, combine all ingredients except the butter. Bring to a boil, stirring constantly. Add butter.
We enjoy it on pancakes, garnished with a dollop of sour cream. Refrigerate or freeze any remaining syrup. It will keep several weeks in the fridge.
Orange Julius
Makes 2 large servings
Ever since college days we’ve enjoyed this refreshing drink on a hot summer evening.
When they were small, my kids liked to have it for a Sunday evening snack--with a bowl of popcorn it’s almost a balanced meal!
1 C. (250 ml) orange juice
1 C. (250 ml) milk
1/3 C. (75 g) sugar
1 tsp. vanilla
12 ice cubes
Combine the juice, milk, sugar and vanilla in a blender. Add the ice cubes one at a time through the hole in the cover. Sometimes I crack up the ice cube a bit in the palm of my hand by hitting it with the back of large spoon--this makes less stress on the blender. The drink will become thick and frothy. Immediately pour into tall glasses and serve with a straw.
