After several years of goat raising, we've decided to add a page for some of our favorite recipes and those of our friends.

 

                            GOAT STROGANOFF

2 pnds of goat meat cubed        1 family size can of cream

                                                   of mushroom soup

1 bag of egg noodles                 1 onion chopped

In a pan add 2 tablespoons of oil, and brown the cubed meat, when meat is brown, add the chopped onion. In a large kettle cook egg noodles until chewy. Add noodles and meat and onion mixture into a large baking dish. Stir in mushroom soup and 1 cup of water or your favorite broth. Salt and pepper to taste. Then bake in a 350 degree oven for 40 minutes. Enjoy, this is a quick and easy meal and our kids love it, hope you do to.

 



Goat Gyros

1 pound of boneless goat meat cut into thin strips.  

1/2 teaspoon of salt

2 tablespoons of olive oil

1 clove of garlic minced

dash of pepper

2/3 cup of reduced fat ranch cucumber salad dressing

1 teaspoon of sugar

5 whole grain gyro style pitas

2 cups of chopped lettuce

1 cup of tomato chopped

1 small cucumber peeled and sliced

1 small sliced red onion

 

In a large nonstick skillet place olive oil and meat, then garlic and salt and pepper, saute for 3-4 minutes or until no longer pink. Mix salad dressing and sugar. serve on pitas with lettuce tomato, cucumber and onion, drizzle with dressing. Makes 5 servings.   Cook time 6 minutes, prep time 15 minutes.

My family love this recipe and its so quick and easy.



Homemade Ice Cream (goats milk)

I owe this great recipe to my Grandma, Dean Spiker, this recipe is one I remember from my childhood, sitting at Grandmas house while Grandpa churned the ice cream outside. Her original recipe was made with cow milk, I added the fresh goats milk and now I have a treat my kids enjoy. Thank you Grandma for your great memories and recipes.

 

2 1/4 Cups of Sugar                        6 TBS Flour   

1/2 ts Salt                                        5 cups of Goats Milk

6 Eggs                                             4 Cups of heavy cream

4 1/2 ts vanilla

In a saucepan put the sugar, flour, salt and milk together stirring constantly and heating slowly, on low heat about 10 minutes until slightly thickend. In a bowl beat the eggs and stir in a small amout of the heated mixture to the eggs. Add this bowlful to the heated saucepan mixture, stirring constantly and cook for 1 more minute. Put mixture in the refrigerator to chill down, when cool add the cream and vanilla. Put in the ice cream maker or churner until set. Makes 1 Gallon your family will enjoy. Add chocolate or other flavors just before putting in the churner to make your favorite flavors.
