My grandmother told my mother that in WWII people here in America were asked to fry their eggs instead of scrambling them. They were told that frying wasted less egg and, with the rationing, one would definitely want to be careful. My grandmother faithfully did this. Also, she always scraped out the eggshell. You'd be surprised how much egg can be saved just by doing this simple little thing. My mother taught me to do this, too, and as a little girl I remember thinking (not knowing that this was not everyone's custom) that it was awful that people wasted so much egg when they didn't scrape out the shell!
