Scald 3 1/2 c. milk. Pour 1/2 c. cold milk in a large bowl and sprinkle the envelopes
of gelatine on top of the milk. Stir thoroughly. Add the scalded milk. Add the honey, and when thoroughly mixed add the heavy whipping
cream. Stir in the salt and vanilla.Freeze in an ice cream freezer until it is the right texture. It usually
takes our electric ice cream freezer 40 min. to an hour. We check
it every 15-20 minutes and dump out any accumulated water and
add ice and salt at those points). When the ice cream is ready add your choice of fruit and/or frozen
juice concentrate, if you wish. Freeze about 10 more minutes or
until it is ready. This recipe makes a little less than 1 gallon if you add fruit and/or juice.
If you want vanilla ice cream, double the ingredients to make 1 gallon.

Frozen juice concentrates that are sugar free:
White grape peach with peaches
White grape cranberry
Apple juice with apples and cinnamon
Grape juice
Orange-Peach-Mango juice
Carob
Anise (this is good with carob, too.)
Berry (we use frozen berries with no sugar added) - cherry, strawberry,
blackberry, raspberry, blueberry, etc. are wonderful
together or seperately. We sometimes add juice to the
berries such as white grape peach, white grape cranberry, or

Work on the following when your homemade ice cream is about halfway done.
1/2 package of Dark Sweet Cherries (the Hill Country Fare brand has no sugar added) - this would be approx. 8 oz. 1/2 package of Berry Medley (same brand has no sugar added and includes blueberries, raspberries, strawberries, and blackberries) 1 pint of strawberries. 1/3 cup frozen white grape cranberry juice concentrate
Chop the fruit up into small pieces while it is only slightly thawed making sure that there are no pits in the cherries! :-) Then we blend half of the fruit in the blender with the juice concentrate and a cup or two of the ice cream. Then we add this blended mixture and the other half of the fruit to the ice cream and finish freezing it until it is the right texture.
